I made a tasty dinner last night, here’s the list of ingredients! 

  • Hot Italian sausage
  • Serrano peppers
  • Portobello mushrooms
  • Tomatillos 
  • Chick Peas
  • Polenta
  • Red onion
  • Shaved parmesan cheese
  • Chicken broth

These are the steps:

Sautee the chick peas in olive oil with salt and pepper. Simultaneously boil 3 cups water / 3 cups chicken broth.  Once boiling add 2 cups polenta, stir in butter as it thickens and then set aside on a plate to cool.  Cook the sausage and all the veggies together in a skillet.  As the sausage cooks the juice create a nice broth for the veggies to cook in and the tomatillos add a nice contrasting sweetness.  Once the sausage is done, set aside and cut the polenta into squares and fry in the left over sausage juice.  Plate and serve!
